The team at Stellar Concepts is very excited to be working with Sydney Harbour Marriott on their $15 million transformation which will hero two new venues; Silvester’s and Three Bottle Man, as well as a refreshed Custom’s House Bar.
The Circular Quay area is the centrepiece of our beautiful harbour city, home to Australia’s most iconic landmarks and a host of premium lifestyle destinations. Sydney Harbour Marriott’s renovation will breathe further life into this much loved precinct, offering something for everyone; from international guests to local Sydney-siders.
These venues won’t be the usual, stuffy hotel restaurants you’ve come to expect. Rather, they will be unique, character-filled venues offering intriguing experiences from start to finish.
‘Located in a space so quintessentially Australian, the three venue identities will be reminiscent of the heritage of the site in which they are built, yet present exciting, contemporary concepts for the modern Sydney-sider. Launching in March will be the following venues:
- Silvester’s: Set to break away from the mould of the traditional hotel restaurant, Silvester’s will be a 120-seat eclectic Australian restaurant with a focus on sustainability and fresh produce. Featuring an open kitchen, guests will have a front-row seat to all the action.
- Three Bottle Man: Café by day and wine/cocktail bar by night, Three Bottle Man will offer breakfast, lunch and dinner. This charismatic venue will be located in Bulletin Place laneway.
- Custom’s House Bar: The re-launched Custom’s House Bar will see this Sydney favourite expand in size and charm. 56 interior seats are being added to the existing venue which will offer a food and drink menu with a nod to the location’s colonial roots.
